The Grain Renaissance

Most modern wheat has been industrialized for yield, not flavor–bred to maximize output at the cost of nutrition and digestibility.

At Maison Methodologie, we return to pre-industrial grains like Einkorn (pronounced EYEN-korn) and Spelt. They’re easier to digest, lower on the glycaemic index, and richer in protein, potassium, and vitamin B6. Their flavor is nutty, velvety, and deeply aromatic.

These grains are the foundation of artisanal European baking, which is why you may feel lighter after a croissant in Paris than a cookie in New York. We’re bringing this craft home, combining heritage grains with European baking standards to create protein cookies that feel indulgent yet nourishing.
