After moving to Paris, I couldn’t resist the pastries and felt surprised that I could eat croissants, cookies, and bread without experiencing the uncomfortable bloating I’d gotten used to with pastries in the United States. I’ve learned that this is because the best Parisian pastries use pre-industrial grains that are not only more nutritious and tastier but also easier to digest.

I’ve fallen in love with peaceful mornings in Paris that begin with a flat white and a pastry and feel passionate about bringing European baking standards to the United States, which is why I created Maison Methodologie. These Maison Methodologie cookies feature pre-industrial, organic Einkorn wheat, which gives these cookies a flavor and texture unlike anything you’ve had in the United States; they’re nuttier, softer, chewy, and velvety–just like cookies in Paris.

Our cookies are also better-for-you: they have 17-20g protein per cookie and 33% less added sugar. They’ll be subtly sweet, never overly sweet. You'll want to–and be able to–indulge in an entire cookie whenever you heart desires while still looking and feeling your best.
